Step-by-Step Instructions

- Pour cornstarch into a shallow dish. Remove shrimp from marinade, shake off excess liquid, and dredge each shrimp in cornstarch.
- Heat about 1 ½ inches of oil in a large pot to 350°F. Fry shrimp in small batches for 2 minutes or until golden brown.
- Transfer fried shrimp onto a paper towel-lined plate to drain excess oil. Keep warm in a low oven.
- Mix mayonnaise, sweet chili sauce, and Sriracha in a large mixing bowl until well blended.
- Add fried shrimp to the sauce and gently toss until thoroughly coated. Serve immediately.

Notes
Serve immediately after coating for the best flavor and texture. Adjust the heat in the sauce by varying the amount of Sriracha.
