Step-by-Step Instructions
  1. In a medium bowl, combine large shrimp with buttermilk, salt, garlic powder, onion powder, and black pepper. Let marinate for about 10 minutes.
  2. Pour cornstarch into a shallow dish. Remove shrimp from marinade, shake off excess liquid, and dredge each shrimp in cornstarch.
  3. Heat about 1 ½ inches of oil in a large pot to 350°F. Fry shrimp in small batches for 2 minutes or until golden brown.
  4. Transfer fried shrimp onto a paper towel-lined plate to drain excess oil. Keep warm in a low oven.
  5. Mix mayonnaise, sweet chili sauce, and Sriracha in a large mixing bowl until well blended.
  6. Add fried shrimp to the sauce and gently toss until thoroughly coated. Serve immediately.
