Preparation Steps
  1. Start by patting the Yukon Gold potatoes dry with a kitchen towel to enhance crispiness and cut them into uniform 1-inch cubes.
  2. In a medium mixing bowl, combine onion powder, garlic powder, salt, black pepper, and paprika. Add olive oil to create a paste-like mixture.
  3. Add the potato cubes to the spice mix and stir gently until evenly coated.
  4. Preheat your air fryer to 400°F (200°C). Lightly oil the basket and arrange seasoned potatoes in a single layer. Cook for 18 minutes, shaking halfway through.
  5. For the oven, preheat to 425°F (220°C), line a baking sheet with foil, and spread potato cubes in a single layer. Bake for 25-30 minutes, flipping halfway.
  6. In a small saucepan, sauté minced garlic in olive oil until fragrant. Stir in cayenne pepper, chopped cilantro, paprika, and lemon juice. Remove from heat.
  7. Toss the crispy potatoes with the cilantro sauce in a serving dish and serve warm.
