- Prep the Ingredients: Slice the heirloom tomatoes and mozzarella cheese into 1/4 inch thick pieces. Pat the tomato slices dry with a paper towel. In a small bowl, whisk together mayonnaise and fresh pesto.
- Assemble the Sandwich: Spread the pesto-mayo mixture on one side of each slice of bread. Layer with mozzarella, heirloom tomato slices, bacon, and arugula. Top with another slice of bread, pesto-mayo side down.
- Preheat the Panini Press: Power on the panini press and preheat it to medium-high heat for about 5 minutes.
- Grill the Panini: Place the assembled BLT panini on the grill, close the lid and cook for about 3-5 minutes until golden brown.
- Serve Immediately: Remove from the press, slice in half, and enjoy while warm.
