  • 3 cloves Garlic fresh minced
  • 1 cup Red Onion finely chopped
  • 1/4 cup Fresh Cilantro chopped; substitute with parsley if preferred
  • 1 teaspoon Salt adjust according to preference
  • 1/2 teaspoon Black Pepper or white pepper
  • 1 teaspoon Smoked Paprika or regular paprika if desired
  • 1 large Egg beaten; or use a flax egg for vegan option
  • 1/2 cup All-Purpose Flour or gluten-free flour if needed
  • 1/2 cup Vegetable Oil for frying
For the Garlic-Lime Mojo
  • 1/4 cup Olive Oil extra virgin for better flavor
  • 2 tablespoons Lime Juice or lemon juice as substitute
  • 1 tablespoon White Vinegar or apple cider vinegar
  • 1 teaspoon Cumin to taste
  • 1 teaspoon Salt to taste

Method
 

Step-by-Step Instructions
  1. Boil the yuca in salted water for about 20 minutes until fork-tender, then drain and remove any tough core.
  2. Mash the drained yuca in a mixing bowl until smooth but with some texture.
  3. Mix the mashed yuca with garlic, onion, cilantro, salt, pepper, paprika, beaten egg, and flour until well combined.
  4. Shape the mixture into 6 thick, round cakes and place on a lined plate.
  5. Fry the cakes in hot oil over medium heat for 3-4 minutes per side until golden brown.
  6. Make the mojo by heating olive oil and sautéing minced garlic for 1 minute, then adding lime juice, vinegar, cumin, and salt.
  7. Serve the yucca cakes warm, drizzled with mojo or on the side for dipping.

Notes
