- Boil the yuca in salted water for about 20 minutes until fork-tender, then drain and remove any tough core.
- Mash the drained yuca in a mixing bowl until smooth but with some texture.
- Mix the mashed yuca with garlic, onion, cilantro, salt, pepper, paprika, beaten egg, and flour until well combined.
- Shape the mixture into 6 thick, round cakes and place on a lined plate.
- Fry the cakes in hot oil over medium heat for 3-4 minutes per side until golden brown.
- Make the mojo by heating olive oil and sautéing minced garlic for 1 minute, then adding lime juice, vinegar, cumin, and salt.
- Serve the yucca cakes warm, drizzled with mojo or on the side for dipping.
