  • 2 cups Fresh Corn or canned/frozen
  • 1 cup Cornmeal
  • 1 cup All-Purpose Flour or gluten-free blend
  • 1 teaspoon Paprika adjust to taste
  • 1 large Egg or extra for looser mixture
  • 1 cup Parmesan Cheese or vegan cheese
  • 1/4 cup Green Onions finely chopped
  • 1/4 cup Cilantro or parsley
  • 2 tablespoons Lime Juice or lemon juice

Cooking Steps
  1. In a large mixing bowl, combine the sweet corn, cornmeal, all-purpose flour, paprika, and egg. Stir until well mixed.
  2. Add in the grated Parmesan cheese, finely chopped green onions, cilantro, and lime juice. Adjust consistency with water if too dry.
  3. Heat oil in a skillet over medium heat until shimmering, about 3-5 minutes.
  4. Scoop out portions of the mixture, shape into small patties, and fry in the oil for about 4 minutes on each side until golden brown.
  5. Drain on paper towels and serve warm, optionally garnished with sour cream or your favorite dipping sauce.
