- In a large mixing bowl, combine the sweet corn, cornmeal, all-purpose flour, paprika, and egg. Stir until well mixed.
- Add in the grated Parmesan cheese, finely chopped green onions, cilantro, and lime juice. Adjust consistency with water if too dry.
- Heat oil in a skillet over medium heat until shimmering, about 3-5 minutes.
- Scoop out portions of the mixture, shape into small patties, and fry in the oil for about 4 minutes on each side until golden brown.
- Drain on paper towels and serve warm, optionally garnished with sour cream or your favorite dipping sauce.
