Step-by-Step Instructions

  2. In a large bowl, combine grated zucchini with salt and let sit for about 10 minutes to draw out moisture.
  3. Squeeze out excess moisture from the zucchini using a clean kitchen towel.
  4. Mix the dried zucchini with breadcrumbs, crumbled feta, grated Parmesan, egg, minced garlic, oregano, black pepper, and optional red pepper flakes until well combined.
  5. Form the mixture into 1 to 2-inch tots and place on the prepared baking sheet.
  6. Lightly spray tots with cooking spray or drizzle with olive oil.
  7. Bake for 20-25 minutes, flipping halfway through until golden brown and crispy.
  8. Remove from oven, cool slightly, and serve with tzatziki sauce or your favorite dip.
