- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Beat on medium speed until soft peaks form, about 2-3 minutes.
- Gradually add half of the fine sugar, mixing well until fully incorporated. Sprinkle in the remaining sugar while mixing until stiff peaks form.
- Use a pastry bag or spoon to create 1 1/2-inch mounds on the lined baking sheets, leaving space for expansion.
- Bake for about 20 minutes until they look dry and feel crisp. Turn off the oven, crack the door slightly, and allow to dry for 30 minutes.
- Remove from the oven and let cool completely on the parchment paper.
