Method
 

Step-by-Step Instructions
  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.

  3. Gradually add half of the fine sugar, mixing well until fully incorporated. Sprinkle in the remaining sugar while mixing until stiff peaks form.
  4. Use a pastry bag or spoon to create 1 1/2-inch mounds on the lined baking sheets, leaving space for expansion.
  5. Bake for about 20 minutes until they look dry and feel crisp. Turn off the oven, crack the door slightly, and allow to dry for 30 minutes.
  6. Remove from the oven and let cool completely on the parchment paper.
