  • 2 cups tapioca flour
  • 1 cup whole milk can substitute with unsweetened plant-based milk
  • 2 large eggs can substitute with flaxseed meal mixed with water
  • 1/4 cup vegetable oil can substitute with melted butter
For the Cheese Mixture
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese can omit for lighter texture
For Seasoning
  • 1 teaspoon salt kosher or sea salt preferred
  • 1 teaspoon garlic powder can substitute with onion powder or omit

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and coat mini muffin pans with non-stick spray.
  2. Blend the tapioca flour, whole milk, eggs, vegetable oil, cheddar, mozzarella, salt, and garlic powder in a blender until smooth.
  3. Pour the batter into prepared muffin pans, filling each well about ¾ full.
  4. Bake in the preheated oven for 19-20 minutes until golden brown and puffed up.
  5. Cool in the pans for a few minutes before removing and serving warm.
