  2. Lay one egg roll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center, fold the corner over the filling, roll tightly, and seal edges with water.
  3. Pour enough oil into a deep fryer or large pot to fill 2-3 inches deep. Heat oil over medium-high until it reaches 350°F. Test readiness by dropping in a small piece of bread; it should sizzle.
  4. Lower a few egg rolls into the hot oil, frying for 3-4 minutes on each side until golden-brown. Use a slotted spoon to turn halfway through.
