Step‑by‑Step Instructions
- In a mixing bowl, combine cream cheese, shredded cheddar cheese, diced jalapeños, chopped green onions, garlic powder, and onion powder. Mix until smooth, about 2-3 minutes.
- Lay one egg roll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center, fold the corner over the filling, roll tightly, and seal edges with water.
- Pour enough oil into a deep fryer or large pot to fill 2-3 inches deep. Heat oil over medium-high until it reaches 350°F. Test readiness by dropping in a small piece of bread; it should sizzle.
- Lower a few egg rolls into the hot oil, frying for 3-4 minutes on each side until golden-brown. Use a slotted spoon to turn halfway through.
- Transfer fried egg rolls to a plate lined with paper towels to absorb excess oil. Allow to cool and serve with dipping sauces.

Notes
These egg rolls can be prepared in advance; freeze uncooked egg rolls for up to 3 months and bake or fry directly from the freezer when ready.
