  • 2 pieces Dried Chilies (Guajillo or Ancho)
  • 1 medium Onion Chopped
  • 3 cloves Garlic Fresh, minced
  • 2 cups Tomatoes Canned or fresh, chopped
For the Meat
  • 3 pounds Beef Chuck Roast Or substitute with pork shoulder or chicken thighs
  • 4 cups Beef Broth Or chicken/vegetable broth
For Additional Flavor
  • 1 cup Vinegar (Apple Cider or White)
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Ground Cumin
  • 2 leaves Bay Leaves
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
Optional Toppings
  • 1 cup Fresh Cilantro Chopped
  • 1 cup Diced Onions Soak in water for a milder taste
  • 2 pieces Avocado Sliced
  • 1 cup Queso Fresco Crumbled

Method
 

Step-by-Step Instructions
  1. Soak the dried chilies in hot water for about 15 minutes until soft.
  2. Blend the soaked chilies with onion, garlic, and tomatoes until smooth.
  3. Place the beef chuck roast in the crock pot and pour the blended chili sauce over it.
  4. Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper to the crock pot.
  5. Cover and cook on low for 8 to 10 hours until the beef is tender.
  6. Shred the cooked beef and mix back into the sauce.
  7. Fry corn tortillas in oil until crispy, then fill with the beef mixture.
  8. Assemble the tacos and fry briefly until golden and crispy.
