  • 2 large Carrots grated or julienned
  • 2 Apples Honeycrisp or Granny Smith, chopped
For the Dressing
  • 1/2 cup Yogurt dairy-free option available
  • 1 tablespoon Lemon Juice freshly squeezed
Optional Add-ins
  • 1/4 cup Nuts walnuts or sunflower seeds, toasted if desired
  • 1/4 cup Raisins soaked in warm water

Method
 

Preparation Steps
  1. Grate about two large carrots until you have a heaping cup. Wash, peel, and chop one or two apples.

  4. Gently toss the mixture until all ingredients are well-coated with the dressing.
