- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan with parchment paper or cooking spray.
- In a large mixing bowl, combine softened butter, sugar, and brown sugar, stirring until creamy. Add baking soda, salt, flour, and quick oats, mixing until crumbly. Reserve half for topping and press remaining half into the baking pan.
- Bake the crust for about 13 minutes or until lightly golden and fragrant. Let cool slightly.
- In another bowl, beat the cream cheese until smooth. Gradually whisk in sweetened condensed milk, egg yolk, and vanilla until creamy.
