  • 3 pounds Sweet Potatoes peeled and sliced
  • 2 cups Fresh Cranberries or frozen if thawed and drained
  • 1 cup Heavy Cream or coconut cream for vegan
  • 1/2 cup Brown Sugar or maple syrup as a substitute
  • 1 teaspoon Cinnamon optional
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
  • 1 cup Gruyère Cheese shredded, can substitute with cheddar or mozzarella
  • 1 cup Breadcrumbs or ground nuts for gluten-free

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into evenly-sized rounds. Boil in water for 10-15 minutes until tender.
  3. Drain and place half of the sweet potatoes in a greased baking dish, overlapping.
  4. Sprinkle half of the fresh cranberries over the first layer of sweet potatoes.
  5. In a mixing bowl, combine heavy cream, brown sugar, cinnamon, salt, and pepper. Whisk until smooth.
  6. Pour half of the cream mixture over the sweet potato and cranberry layers.
  7. Add the remaining sweet potatoes, then the remaining cranberries, and finally pour the rest of the cream mixture.
  8. Top with Gruyère cheese and breadcrumbs.
  9. Bake for 30-35 minutes until the top is golden brown and bubbly.
