Preparation Instructions
  1. In a mixing bowl, combine 1/3 cup of softened salted butter with 1/4 cup of oil-packed sun-dried tomatoes, a pinch of salt, and fresh-cracked black pepper to taste. Use a fork to thoroughly mash and mix until you have a smooth, creamy consistency.
  2. Slice the avocado in half, remove the pit, and carefully peel the skin off. Cut the avocado into thin slices and toss them in a bowl with juice from 1/2 a lemon and a small pinch of salt.
  3. Take a 12-inch loaf of ciabatta bread and slice it in half lengthwise. Spread a generous amount of sun-dried tomato butter on both cut sides. Layer 1/4 pound of white cheddar cheese, followed by 1/2 pound of deli turkey, fresh basil, marinated avocado, sliced pickles, and arugula.
  4. Drizzle extra virgin olive oil over the assembled ingredients, and sprinkle a final pinch of salt. Fold the sandwich back together and slice it into portions if desired.
