Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Blend until creamy but slightly chunky.
- Gently fold in the fresh blueberries.
- Roll out the thawed puff pastry to about 1/8-inch thickness and cut into 4-inch squares.
- Place a spoonful of the cream cheese and blueberry filling in the center of each square and fold the corners to seal.
- Transfer the pastries to the baking sheet and bake for 15-20 minutes until golden brown.
- Cool for a few minutes before serving warm.
