- In a medium saucepan, combine 1 cup of blueberries, 2 tablespoons of honey or maple syrup, and the juice of half a lemon over medium heat. Stir gently and allow to simmer for about 5-7 minutes until blueberries soften and release juices. Optional: Mix 1 teaspoon of cornstarch with 1 tablespoon of water, stir it in, and cook for another minute.
- In a large mixing bowl, add 2 cups of Greek yogurt along with 1 teaspoon of vanilla extract. Mix until smooth and creamy. Adjust sweetness if needed.
- Spoon the yogurt mixture into molds, filling them about three-quarters full to leave space for the compote.
- Top each mold with a spoonful of blueberry compote and gently swirl it into the yogurt mixture using a toothpick.
- Place the molds in the freezer and freeze for at least 3 hours or until solid.
- Once frozen, carefully pop the bites out. Store in an airtight container in the freezer.
