- Preheat your oven to 400°F (200°C). Gather your baking dish and prepared ingredients.
- In the baking dish, combine finely diced onion, chopped red bell pepper, uncooked rice, fajita seasoning, and optional cayenne pepper.
- In a separate bowl, whisk together chicken broth, green chiles, tomato paste, and olive oil. Pour over the rice mixture.
- Fold in shredded chicken, black beans, and corn. Stir until all ingredients are combined.
- Cover the dish with aluminum foil and bake for 65–70 minutes, checking for liquid absorption and tender rice.
- After 65–70 minutes, remove the foil and sprinkle cheese on top. Bake uncovered for an additional 5–10 minutes until cheese is melted.
- Let the casserole cool for 5–10 minutes before serving topped with cilantro, green onion, salsa, and avocado.
