- Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or use muffin liners.
- In a large mixing bowl, combine softened butter and sugar, and beat them on medium speed for about 2-3 minutes.
- Mix in peanut butter, mashed bananas, milk, and vanilla until well combined.
- Add eggs to the batter and mix until fully integrated.
- Gradually add gluten-free flour, baking powder, baking soda, salt, and cocoa powder, stirring until just combined.
- Fill each muffin cup two-thirds full with the batter.
- Add about 1/2 teaspoon of peanut butter on top of each muffin and swirl with a toothpick.
