  • 1/2 cup Butter can substitute with coconut oil or a dairy-free butter alternative
  • 3/4 cup Sugar white sugar is recommended, but coconut sugar can be used
  • 1 cup Peanut Butter use a thick, creamy variety
  • 2 large Overripe Bananas mashed
  • 1/3 cup Milk of Choice opt for skim, 2%, whole, or almond milk
  • 1 teaspoon Vanilla
  • 2 large Eggs or use flax/psyllium eggs for a vegan version
  • 1 1/2 cups Gluten-Free All-Purpose Flour regular flour can also be used
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/4 cup Cocoa Powder sieved to avoid lumps
For the Peanut Butter Swirl
  • 1/2 teaspoon Peanut Butter for Swirl

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or use muffin liners.
  2. In a large mixing bowl, combine softened butter and sugar, and beat them on medium speed for about 2-3 minutes.
  3. Mix in peanut butter, mashed bananas, milk, and vanilla until well combined.
  4. Add eggs to the batter and mix until fully integrated.
  5. Gradually add gluten-free flour, baking powder, baking soda, salt, and cocoa powder, stirring until just combined.
  6. Fill each muffin cup two-thirds full with the batter.
  7. Add about 1/2 teaspoon of peanut butter on top of each muffin and swirl with a toothpick.
  8. Bake in the preheated oven for 18-20 minutes. Check doneness with a toothpick.
  9. Cool in the tin for 5 minutes before transferring to a wire rack.
