Step-by-Step Instructions for Soft and Fluffy Homemade Pretzel Bites
  1. In a stand mixer, combine 4 cups of all-purpose flour, 1 tablespoon of sugar, 2 teaspoons of instant yeast, and 1 teaspoon of salt. Pour in 1¼ cups of warm milk and 2 tablespoons of melted butter. Mix on medium speed for 4-5 minutes until a smooth dough forms.
  2. Place the dough in a lightly greased bowl and cover with a damp cloth. Set in a warm area for 30-60 minutes or until doubled in size.
  3. Punch the risen dough down gently, divide into 12 pieces, roll into ropes, and cut into bite-sized pieces.
  4. Bring 10 cups of water to a boil in a large pot and stir in ⅔ cup of baking soda. Boil pretzel bites in batches for 30 seconds each.
  5. Preheat the oven to 450°F, line baking sheets with parchment paper, and place boiled bites on sheets. Brush with egg wash and sprinkle with salt. Bake for 12-14 minutes until golden brown.
  6. Remove bites from the oven and let cool on a wire rack for about 5 minutes before serving warm.
