Step-by-Step Instructions
  1. Prepare the chicken breasts by pounding them to an even thickness. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Coat the chicken in the marinade and let sit for 20 minutes.
  2. Heat a skillet over medium-high heat and add oil. Cook the marinated chicken for 6-7 minutes per side, until caramelized and cooked through.
  3. Combine the cooked rice, lime juice, chopped cilantro, and a pinch of salt in a separate bowl.
  4. Slice the ripe avocados and drizzle with lime juice to prevent browning. Season with salt and pepper.
  5. Assemble the stack using a ring mold: layer seasoned rice, honey lime chicken slices, and avocado on top.
  6. Serve immediately, garnished with additional cilantro if desired.
