  2. Cook the Syrup: In a large saucepan, combine granulated white sugar, golden syrup or honey, water, and optional salt. Heat the mixture over medium-high heat without stirring, swirling the pan occasionally.
  3. Heat to Hard Crack Stage: Attach a candy thermometer to the saucepan and continue cooking the syrup mixture to a hard crack stage at 300°F (150°C).
  4. Add Baking Soda: Remove the saucepan from heat and quickly whisk in the baking soda, watching it froth and expand dramatically.
  5. Transfer to the Pan: Immediately pour the bubbly mixture into the prepared baking pan, using a spatula to scrape every bit out.
  6. Break into Pieces: Once the honeycomb candy has fully cooled, lift it out of the pan and break it into irregular pieces.
