  • 1 tablespoon olive oil vegetable oil can be used

Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour and cold butter, blending until it resembles coarse crumbs. Gradually add ice water and mix until cohesive. Knead gently for 2-3 minutes, wrap in plastic and rest in the fridge for 15-30 minutes.
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add drained spinach, sauté for 3-4 minutes until wilted. Remove from heat, crumble feta into spinach and stir until combined. Let cool slightly.
  3. On a floured surface, roll out chilled dough to 1/8 inch thick. Cut out circles, place a teaspoon of filling in the center, fold dough over and seal edges with a fork.
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment, arrange crisps in a single layer, brush with olive oil and bake for 25-30 minutes until golden brown.
  5. Let baked crisps cool on the sheet for 5 minutes. Serve warm with tzatziki or your favorite dip.
