  • 2 pieces ciabatta roll can substitute with sourdough
  • 2 tablespoons good quality olive oil
For the Filling
  • 1/2 cup basil pesto store-bought or homemade
  • 4 slices prosciutto optional for vegan version
  • 2 medium heirloom tomatoes any ripe tomato variety works
  • 1 cup arugula can substitute with spinach
  • 8 ounces fresh mozzarella or burrata mozzarella balls can be a substitute
For the Glaze
  • 1/4 cup balsamic vinegar glaze do not substitute with plain balsamic vinegar

Method
 

Step‑by‑Step Instructions
  1. Slice the ciabatta roll in half horizontally and drizzle olive oil on each cut side.
  2. Toast the ciabatta halves on a preheated panini press or skillet over medium heat for about 3-5 minutes.
  3. Spread basil pesto on both halves of the ciabatta.
  4. Layer mozzarella or burrata on the bottom half, followed by prosciutto (or skip for vegan version).
  5. Add sliced heirloom tomatoes on top of the mozzarella, followed by arugula.
  6. Drizzle balsamic glaze over the layered ingredients.
  7. Complete the sandwich by placing the top half of the ciabatta over the fillings, slice, and serve immediately.
