  • 2 cups small pasta like shells or rotini
  • 1 pound shrimp fresh or pre-cooked
  • 8 ounces imitation crab meat
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1 medium red onion diced
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 1 cup mayonnaise or Greek yogurt
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice fresh
  • 1 tablespoon Old Bay seasoning
  • to taste salt

Optional Ingredients
  • 1 teaspoon paprika for garnish

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente, then drain and rinse under cold water.
  2. If using fresh shrimp, bring a small saucepan of water to boil. Add the shrimp and cook for 2-3 minutes until pink and opaque. Let cool, then chop. If using pre-cooked shrimp, chop them.
  3. Dice the celery, red bell pepper, and red onion into small pieces. Soak the red onion in cold water for a milder flavor if desired. Finely chop the parsley.
  4. In a small bowl, combine mayonnaise, sour cream, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper, and whisk until smooth.
  5. In a large bowl, combine the cooled pasta, chopped shrimp, imitation crab, and diced vegetables. Pour the dressing over and toss to coat.
  6. Cover and refrigerate for at least 1 hour.
  7. Before serving, gently toss again and garnish with parsley and paprika.
