Ingredients
  

For the Salad
  • 4 mini Cucumbers Persian or English cucumbers are also suitable.
  • 2 stalks Green Onions Use both white and green parts.
  • 1 tablespoon Sesame Seeds Optional for garnish.
For the Dressing
  • 3 tablespoons Low-Sodium Soy Sauce Tamari or coconut aminos for gluten-free.
  • 1 tablespoon Rice Vinegar White wine vinegar can be substituted.
  • 1 tablespoon Sesame Oil Chili oil can be used for an alternative.
  • 1 teaspoon Honey Maple syrup can be used instead.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Crushed Red Pepper Flakes Adjust for spice preference.

Method
 

Preparation
  1. Wash and dry the mini cucumbers thoroughly. Cut off the ends and slice at a 45° angle between chopsticks. Then, cut again at a 90° angle, twist, and cut the spiraled cucumbers in half.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and crushed red pepper flakes. Adjust seasoning to taste.
  3. Pour the dressing over the cucumbers and toss gently. Add chopped green onions and sprinkle sesame seeds on top.
  4. Serve immediately or allow to marinate for 30 minutes in the refrigerator.
