Preparation
- Wash and dry the mini cucumbers thoroughly. Cut off the ends and slice at a 45° angle between chopsticks. Then, cut again at a 90° angle, twist, and cut the spiraled cucumbers in half.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and crushed red pepper flakes. Adjust seasoning to taste.
- Pour the dressing over the cucumbers and toss gently. Add chopped green onions and sprinkle sesame seeds on top.
- Serve immediately or allow to marinate for 30 minutes in the refrigerator.
