  • 2 cups chopped spinach can be used raw or lightly sautéed
  • 1 cup breadcrumbs opt for gluten-free breadcrumbs for a gluten-free version
  • 0.5 cup Parmesan cheese optional, can be omitted for a vegan adaptation
  • 0.5 cup finely chopped onion yellow or red onion can also be used
  • 2 cloves minced garlic fresh is ideal
  • 1 teaspoon ground cumin coriander can be an alternative
  • 1 teaspoon smoked paprika regular paprika can work as a substitute

  • 1 large egg replace with a flaxseed or chia egg for a vegan option
  • 2 tablespoons olive oil substitute with avocado or vegetable oil if needed

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine cooked lentils, chopped spinach, breadcrumbs, optional Parmesan cheese, finely chopped onion, minced garlic, ground cumin, smoked paprika, and salt and black pepper to taste. Stir thoroughly.
  2. Crack one large egg into the mixture, or use a flaxseed or chia egg for a vegan option. Mix until fully combined.
  3. Divide the mixture into four equal portions. Shape each portion into a compact patty that is about 1 inch thick.
  4. In a non-stick skillet, heat olive oil over medium heat. Place the patties in the skillet, leaving space between them.
  5. Cook the burgers for 4-5 minutes on one side until golden-brown. Flip and cook the other side for an additional 4-5 minutes.
  6. Remove cooked patties and serve on toasted buns with your choice of toppings.
