Ingredients
  

Dressing
  • 1/2 cup Balsamic Vinegar substitute with red wine vinegar for a different flavor
  • 2 tablespoons Honey or brown sugar; maple syrup can be used as a vegan alternative
Salad Base
  • 4 cups Baby Spinach can substitute with mixed greens or kale
  • 1 cup Strawberries sliced; blueberries can add variety
  • 1/2 cup Feta Cheese can substitute with goat cheese or omit for dairy-free
  • 1/4 cup Pecans can be swapped with walnuts or sunflower seeds

Method
 

Preparation
  1. In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes until slightly thickened. Allow to cool.
  2. Rinse baby spinach and strawberries under cold water. Pat dry and slice strawberries. Rinse blueberries if using.
  3. In a large salad bowl, combine baby spinach, sliced strawberries, and blueberries. Gently toss together.
  4. Crumble feta cheese over the salad and sprinkle in pecans. Toss gently to combine.
  5. Drizzle the balsamic glaze over the salad just before serving. Enjoy!
