Step-by-Step Instructions for Sweet Potato Tortillas
  1. Steam or boil the sweet potatoes for 15-20 minutes until tender, then mash.
  2. Combine the mashed sweet potatoes with vegan butter and hot water, set aside to cool.
  3. Mix the gluten-free sourdough starter with psyllium husk, incorporate sweet potato mixture, let rest for 10 minutes.
  4. Integrate arrowroot flour and baking powder until dough consistency forms.
  5. Preheat skillet over medium heat for 5-7 minutes. Divide dough into 5 balls, roll thin between parchment.
  6. Cook each tortilla for 30-45 seconds on each side until lightly golden.
  7. Cool tortillas for a minute before serving with your choice of fillings.
