  • ½ cup mayonnaise Greek yogurt can be used as a lighter option.
  • 2 tablespoons red wine vinegar White wine vinegar can be used as an alternative.

  • 1 tablespoon sweetener Opt for honey or agave for non-keto diets.
  • 1 teaspoon Italian seasoning Substitute with oregano, basil, and thyme.
  • salt & pepper Adjust according to taste.
Salad
  • 16 oz shredded iceberg lettuce Other lettuces like romaine or spinach are great too.
  • 4 oz ham Customize with your favorite deli meats.
  • 4 oz pepperoni Customize with your favorite deli meats.
  • 4 oz salami Customize with your favorite deli meats.
  • 4 oz provolone cheese Mozzarella can serve as a substitute.
  • 1 pint grape tomatoes Cherry tomatoes can work as well.
  • ½ cup sliced pepperoncini peppers Banana peppers can be milder substitutes.
  • ½ diced red onion Green onions are a milder alternative.

Method
 

Dressing Preparation
  1. In a medium bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, and sweetener until creamy and well combined. Add Italian seasoning, and season with salt, pepper, and optional chili flakes to taste. Set aside for about 5 minutes.
Salad Preparation
  1. While the dressing rests, slice the ham, salami, and pepperoni into strips. Cube the provolone cheese and shred the iceberg lettuce finely.
  2. In a large mixing bowl, combine the shredded lettuce, sliced meats, cubed cheese, halved grape tomatoes, sliced pepperoncini, and diced red onion. Gently toss the ingredients together.
Serving
  1. Drizzle the prepared dressing over the salad ingredients and toss everything gently to coat.
  2. Serve immediately or refrigerate separately until ready to serve.
