Method
 

Preparation Steps
  1. Wash 2 large cucumbers thoroughly and slice them into 1/4-inch rounds.
  2. Halve 1 pint of cherry tomatoes.
  3. If using larger mozzarella, slice it into 1/4-inch rounds.
  4. Combine sliced cucumbers, halved cherry tomatoes, and mozzarella in a large mixing bowl.
  5. Whisk together 2 tablespoons of extra virgin olive oil and 1 tablespoon of balsamic glaze in a small bowl.
  6. Drizzle dressing over the salad and toss gently to coat.
  7. Tear 1/4 cup of fresh basil leaves into smaller pieces and sprinkle over the salad.
  8. Season salad with salt and pepper to taste.
  9. Serve immediately or refrigerate for up to 24 hours without the basil or dressing.
