Preparation Steps
- Slice your ripe peaches and strawberries into small pieces. In a medium-sized pot, combine these fruits with cold water, cane sugar, and lemon juice. Place the pot over medium heat and stir until the sugar dissolves, about 3–5 minutes.
- Bring the fruit mixture to a low boil over medium heat, then reduce the temperature to low. Allow it to simmer gently for about 20 minutes, stirring occasionally to prevent sticking.
- Once the mixture has cooled slightly, pour it through a fine mesh strainer into a bowl to separate the syrup from the fruit solids. Transfer the syrup into a sealed container and store in the fridge.
- Fill a tall glass with ice cubes. Measure out 2 oz of syrup and pour it over the ice.
- Top off your drink with 6 oz of sparkling water, pouring gradually. Stir gently to combine.
- Garnish with additional slices of peaches and strawberries for visual appeal. Enjoy immediately!
