- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
- In the prepared baking dish, combine the diced chicken, lemon juice, olive oil, and all herbs and spices. Marinate for about 30 minutes.
- Add the uncooked long grain white rice and the coarsely grated zucchini to the baking dish. Pour in the chicken broth and stir evenly.
- Cover with aluminum foil and bake for 40 minutes. If the rice isn't fully cooked, bake for an additional 5–10 minutes.
- Remove the foil and fluff the rice with a fork. Serve topped with tzatziki sauce, fresh herbs, and a squeeze of lemon juice.
