Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In the prepared baking dish, combine the diced chicken, lemon juice, olive oil, and all herbs and spices. Marinate for about 30 minutes.
  3. Add the uncooked long grain white rice and the coarsely grated zucchini to the baking dish. Pour in the chicken broth and stir evenly.
  4. Cover with aluminum foil and bake for 40 minutes. If the rice isn't fully cooked, bake for an additional 5–10 minutes.
  5. Remove the foil and fluff the rice with a fork. Serve topped with tzatziki sauce, fresh herbs, and a squeeze of lemon juice.
