Ingredients
  

For the Crust
  • 1 cup Graham Crackers can substitute with crushed Oreos or shortbread
  • 2 tablespoons Granulated Sugar reduce for less sweetness
  • 4 tablespoons Unsalted Butter can replace with coconut oil or margarine
For the Cheesecake Filling
  • 8 oz Cream Cheese must be softened
  • 1/2 cup Powdered Sugar can use sugar alternative
  • 1 teaspoon Vanilla Extract use pure for best flavor
  • 1 cup Heavy Cream can be replaced with coconut cream
  • 5 drops Pink Gel Food Coloring or Freeze-Dried Strawberry Powder optional for coloring
For the Toppings
  • 1 cup Whipped Cream store-bought or homemade
  • 1 cup Pastel Candy Eggs any seasonal candy works
  • 1/4 cup Rainbow or Pastel Sprinkles for decoration

Method
 

Preparation
  1. Crush graham crackers into fine crumbs and mix with granulated sugar and melted butter. Press into jars to form the crust.
  2. Beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until fluffy.
  3. Whip the heavy cream to stiff peaks and gently fold into the cream cheese mixture.
  4. Divide filling and color half with food coloring if desired. Layer the pink filling over the crust, then add the plain filling.
  5. Top with whipped cream, pastel candy eggs, and sprinkles before serving.
