Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped almonds, and sunflower seeds. Pour in the honey and melted coconut oil, vanilla extract, and salt. Mix until sticky.
  3. Transfer the mixture into the prepared baking pan, pressing it down into an even layer.
  4. Bake for 15-20 minutes until the edges turn golden brown.
  5. In a saucepan, combine mixed berries, chia seeds, and maple syrup. Cook over medium heat for 5-7 minutes until thickened.
  6. Spread the berry topping evenly over the baked base layer.
  7. Allow bars to cool completely in the pan on a wire rack. Once cool, lift out using parchment paper and cut into squares.
  8. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. For longer storage, freeze them.
