Cooking Steps
- Preheat your grill to a steady temperature of 225°F (107°C) for about 15-20 minutes.
- Remove the membrane from the back of the baby back ribs for better tenderness.
- Whisk together apple cider vinegar, water, brown sugar, sea salt, black pepper, paprika, garlic powder, onion powder, and optional cayenne pepper in a bowl.
- Marinate the ribs in the mixture for at least 2 hours, preferably overnight.
- Soak wood chips in water for 30 minutes for added smoky flavor.
- Place the ribs bone-side down on the grill grates away from direct heat.
- Cook the ribs low and slow for 4-5 hours at 225°F (107°C), adding soaked wood chips every hour.
- Baste the ribs with BBQ sauce every 30 minutes in the final hour of cooking.
- Lift the ribs with tongs to check doneness; they should bend easily and the meat should pull away from the bones.
