Method
 

Baking Instructions
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites into a large mixing bowl and the yolks into a separate bowl.
  3. Whip the egg whites and cream of tartar until stiff peaks form.
  4. Whisk together the cottage cheese, honey (if desired), and salt in the yolk bowl until smooth.
  5. Gently fold the yolk mixture into the whipped egg whites.
  6. Scoop dollops of the batter onto the lined baking sheet, leaving space between each.
  7. Bake for 25-30 minutes until golden brown and firm to the touch.
  8. Allow to cool on the tray for about 5 minutes before serving.
