- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- In a medium saucepan, combine cornstarch with heavy cream over medium-low heat until thickened, then add butter, minced garlic, thyme, salt, and pepper. Stir constantly until smooth.
- Slice the sweet potatoes into uniform 1/8-inch thick rounds and layer them in the greased baking dish.
- Pour the warm garlic sauce evenly over the layered sweet potatoes.
- Bake uncovered for about 30 minutes until the sweet potatoes are soft and edges start to bubble.
- Remove from oven, sprinkle grated Parmesan cheese on top, and bake for an additional 10 minutes until the cheese is melted and golden.
- Broil for the last 1-2 minutes for extra crispness, watching closely to avoid burning.
- Let the dish rest for 10 minutes before serving to allow the sauce to thicken slightly.
