  • 4 cups sweet potatoes sliced into 1/8-inch rounds
  • 1 cup heavy cream or whole milk for a lighter option
  • 4 tablespoons butter or olive oil for dairy-free version
  • 4 cloves minced garlic fresh garlic preferred
  • 2 teaspoons fresh thyme or rosemary if preferred
  • 1 teaspoon kosher salt adjust to taste
  • 0.5 teaspoon black pepper adjust to taste
  • 0.5 cup grated Parmesan or other cheeses for topping

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a medium saucepan, combine cornstarch with heavy cream over medium-low heat until thickened, then add butter, minced garlic, thyme, salt, and pepper. Stir constantly until smooth.
  3. Slice the sweet potatoes into uniform 1/8-inch thick rounds and layer them in the greased baking dish.
  4. Pour the warm garlic sauce evenly over the layered sweet potatoes.
  5. Bake uncovered for about 30 minutes until the sweet potatoes are soft and edges start to bubble.
  6. Remove from oven, sprinkle grated Parmesan cheese on top, and bake for an additional 10 minutes until the cheese is melted and golden.
  7. Broil for the last 1-2 minutes for extra crispness, watching closely to avoid burning.
  8. Let the dish rest for 10 minutes before serving to allow the sauce to thicken slightly.
