  • 1 teaspoon Onion Powder Optional but recommended
  • 1 teaspoon Italian Seasoning Substitute with oregano or basil if desired
  • 2 tablespoons Olive Oil Can replace with melted butter or cooking spray
For the Creamy Rotini
  • 8 ounces Rotini Pasta Any pasta shape can be used
  • 1 cup Heavy Cream Consider using half-and-half or whole milk for a lighter version
  • 1/4 teaspoon Nutmeg Omit if not available
  • 2 tablespoons Butter Unsalted is preferable
  • 2 tablespoons Fresh Parsley Other herbs can be used for garnish

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Cut chicken breast into bite-sized pieces and coat with the breadcrumb mixture.
  4. Drizzle olive oil over the coated chicken.
  5. Arrange the chicken on the baking sheet and bake for about 15-20 minutes.
  6. Boil salted water and cook rotini according to package instructions.
  7. Melt butter in a skillet, add minced garlic and sauté for about 1 minute.
  8. Pour heavy cream into the skillet with sautéed garlic and bring to a simmer.
  9. Add more Parmesan cheese to the sauce and stir until thickened.
  10. Fold in the cooked rotini, season with salt, pepper, and nutmeg.
  11. Add the baked chicken bites to the creamy rotini and serve with parsley garnish.
