- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Cut chicken breast into bite-sized pieces and coat with the breadcrumb mixture.
- Drizzle olive oil over the coated chicken.
- Arrange the chicken on the baking sheet and bake for about 15-20 minutes.
- Boil salted water and cook rotini according to package instructions.
- Melt butter in a skillet, add minced garlic and sauté for about 1 minute.
- Pour heavy cream into the skillet with sautéed garlic and bring to a simmer.
- Add more Parmesan cheese to the sauce and stir until thickened.
- Fold in the cooked rotini, season with salt, pepper, and nutmeg.
- Add the baked chicken bites to the creamy rotini and serve with parsley garnish.
