  • handful Fresh Mint chopped
For the Dressing
  • ¼ cup Olive Oil extra-virgin is best
  • 2 tablespoons Balsamic Vinegar or red wine vinegar
  • 1 tablespoon Honey or maple syrup for vegan
  • 1 teaspoon Dijon Mustard
