  • 1 cup provolone cheese or mozzarella, can omit for dairy-free
  • 1 cup grape tomatoes or cherry tomatoes
  • 1/2 cup pepperoncini peppers or jalapeños for spice
  • 1/4 cup red onion or green onions

Method
 

Dressing Preparation
  1. In a small bowl, combine mayonnaise, red wine vinegar, minced garlic, sweetener, Italian seasoning, salt, and pepper. Whisk for 1-2 minutes until creamy. Let rest for 5 minutes.
Salad Assembly
  1. Slice ham, salami, and pepperoni into 1/4-inch thick slices. Cube provolone into bite-sized pieces.
  2. Thinly shred iceberg lettuce into bite-size pieces.
  3. In a large mixing bowl, combine shredded lettuce, deli meats, provolone, halved grape tomatoes, chopped pepperoncini, and sliced red onion. Toss gently for 30 seconds.
  4. Drizzle the creamy dressing over the salad and toss for a minute until evenly coated.
