Step-by-Step Instructions for Lasagna Soup
  1. Begin by heating a 4.5-quart soup pot over medium-high heat. Add a drizzle of olive oil and allow it to shimmer for about 1-2 minutes.
  2. Add the ground beef, diced onion, and minced garlic to the pot. Sauté for about 5-7 minutes until the meat is browned and the onions are softened.
  3. Stir in the diced tomatoes (with juice), tomato sauce, and tomato paste. Pour in 4 cups of chicken broth, and sprinkle in Italian seasoning, salt, and black pepper.
  4. Mix in the uncooked bowtie pasta. Bring the mixture to a rapid boil for about 5 minutes, then lower the heat, cover the pot, and let it simmer for 10-15 minutes until the pasta is tender.
