Preparation
- Preheat your oven to 375°F (190°C) and prepare your baking dish with a light coat of cooking spray or olive oil.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add sliced bell peppers and spinach, sautéing for 5-7 minutes until softened.
- In a bowl, combine ricotta cheese, a large egg, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth.
Assembly and Baking
- Spread a thin layer of the ricotta mixture in the baking dish. Layer with zucchini slices or noodles, sautéed vegetables, more ricotta mixture, and mozzarella cheese.
- Top with remaining mozzarella and parmesan cheese. Cover with foil and bake for about 25 minutes.
- Remove foil and bake uncovered for an additional 10-15 minutes until cheese is golden and bubbly.
- Let the lasagna rest for about 10 minutes before serving.
