  • 12 peppers Peperoncini substitute with other mild pickled peppers if desired
For the Filling
  • 8 oz Goat Cheese can use cream cheese for a different texture
  • 1 tbsp Lemon Juice use fresh lemon juice for best taste
  • 1/4 cup Fresh Herbs such as Basil, Tarragon, Dill, or Chives
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Drain the peperoncini from their brine and place them on a clean cutting board. Cut off the tops and gently remove any seeds.
  2. In a food processor, combine softened goat cheese, lemon juice, and chosen herbs. Blend until creamy and well combined, about 1-2 minutes. Adjust seasoning with salt and pepper.
  3. Spoon the goat cheese mixture into each prepared peperoncini, filling generously but not overstuffing.
  4. Arrange stuffed peppers on a serving platter and sprinkle additional chopped herbs on top for garnish.
