- Drain the peperoncini from their brine and place them on a clean cutting board. Cut off the tops and gently remove any seeds.
- In a food processor, combine softened goat cheese, lemon juice, and chosen herbs. Blend until creamy and well combined, about 1-2 minutes. Adjust seasoning with salt and pepper.
- Spoon the goat cheese mixture into each prepared peperoncini, filling generously but not overstuffing.
- Arrange stuffed peppers on a serving platter and sprinkle additional chopped herbs on top for garnish.
