Step-by-Step Instructions
  1. Preheat your oven to 425ºF. Pierce each sweet potato several times with a fork, then microwave for 6 minutes or bake for 45-50 minutes until tender.
  2. Slice each sweet potato lengthwise and scoop out the flesh, leaving a thin layer attached to the skins. Mix the scooped flesh with olive oil and cumin, then mash.
  3. In a skillet, heat olive oil, sauté garlic, then crumble in ground turkey and cook until browned. Add spices, diced tomatoes, black beans, corn, zucchini, and spinach, and heat through.
  4. Fill the hollow sweet potato skins with the mashed mixture and top with the turkey mixture. If desired, sprinkle shredded cheese on top.
  5. Position sweet potatoes on a baking sheet and broil for 6-8 minutes until cheese is melted and golden brown.
  6. Let the stuffed sweet potatoes rest for a couple of minutes. Top with optional green onions, salsa, or Greek yogurt before serving.
