- Preheat your oven to 425ºF. Pierce each sweet potato several times with a fork, then microwave for 6 minutes or bake for 45-50 minutes until tender.
- Slice each sweet potato lengthwise and scoop out the flesh, leaving a thin layer attached to the skins. Mix the scooped flesh with olive oil and cumin, then mash.
- In a skillet, heat olive oil, sauté garlic, then crumble in ground turkey and cook until browned. Add spices, diced tomatoes, black beans, corn, zucchini, and spinach, and heat through.
- Fill the hollow sweet potato skins with the mashed mixture and top with the turkey mixture. If desired, sprinkle shredded cheese on top.
- Position sweet potatoes on a baking sheet and broil for 6-8 minutes until cheese is melted and golden brown.
- Let the stuffed sweet potatoes rest for a couple of minutes. Top with optional green onions, salsa, or Greek yogurt before serving.
