Ingredients
  

For the Fried Chicken
  • 2 lbs Chicken Thighs can substitute with chicken breasts
  • 2 cups Buttermilk or milk mixed with vinegar
  • 1/4 cup Pickle Juice omit if desired
  • 1 cup All-Purpose Flour for crispy coating
  • 1/4 cup Honey for chipotle sauce
  • 2 tbsp Chipotle Peppers in Adobo Sauce or smoked paprika for milder flavor
  • 2 tbsp Brown Sugar omit if less sweetness is desired
  • 1 tbsp Soy Sauce or tamari for gluten-free option
For the Slaw
  • 1 cup Full-Fat Mayonnaise or Greek yogurt
  • 1 bag Coleslaw Mix or customize with cabbage and carrots
  • 1 tbsp Cajun Seasoning to taste
Spices
  • 1 tbsp Salt adjust to taste
  • 1 tsp Garlic Powder or fresh garlic if desired
  • 1 tsp Onion Powder optional
  • 1 tsp Smoked Paprika substitute with regular paprika for less smoke
  • 1/2 tsp White Pepper or regular black pepper

Method
 

Marinating and Preparing
  1. Whisk together buttermilk, pickle juice, salt, garlic powder, onion powder, smoked paprika, and white pepper in a large bowl. Submerge chicken thighs in the marinade. Cover and refrigerate for at least 3 hours, ideally overnight.
  2. In another bowl, mix coleslaw mix, mayonnaise, Cajun seasoning, and a pinch of salt. Cover and refrigerate to chill while chicken marinates.
Cooking
  1. Mix all-purpose flour, salt, garlic powder, onion powder, and smoked paprika on a shallow plate. Remove chicken from marinade and dredge in the seasoned flour.
  2. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken thighs in batches for 5-7 minutes per side until golden brown. Drain on a rack or paper towels.
  3. In a small saucepan, combine honey, chipotle peppers, brown sugar, and soy sauce. Warm over low heat, stirring for 3-5 minutes.
  4. Assemble sandwiches by brushing crispy chicken with sauce, placing on toasted brioche buns, topping with slaw and pickle chips, and serving immediately.
