Marinating and Preparing
- Whisk together buttermilk, pickle juice, salt, garlic powder, onion powder, smoked paprika, and white pepper in a large bowl. Submerge chicken thighs in the marinade. Cover and refrigerate for at least 3 hours, ideally overnight.
- In another bowl, mix coleslaw mix, mayonnaise, Cajun seasoning, and a pinch of salt. Cover and refrigerate to chill while chicken marinates.
Cooking
- Mix all-purpose flour, salt, garlic powder, onion powder, and smoked paprika on a shallow plate. Remove chicken from marinade and dredge in the seasoned flour.
- Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken thighs in batches for 5-7 minutes per side until golden brown. Drain on a rack or paper towels.
- In a small saucepan, combine honey, chipotle peppers, brown sugar, and soy sauce. Warm over low heat, stirring for 3-5 minutes.
- Assemble sandwiches by brushing crispy chicken with sauce, placing on toasted brioche buns, topping with slaw and pickle chips, and serving immediately.
