  • 2 cups Fresh Strawberries Frozen strawberries can be used but should not be thawed beforehand.
  • 1/4 cup Granulated Sugar Use honey or monkfruit for a healthier alternative.
  • 1 cup Heavy or Whipping Cream Must have at least 30% fat content; coconut cream can be used for a dairy-free option.

Method
 

Step-by-Step Instructions
  1. Wash 2 cups of fresh strawberries and slice them. Blend with 1/4 cup of granulated sugar until smooth. Reserve 1/2 cup of puree for later.
  2. Chill a mixing bowl for 10 minutes. Pour in 1 cup of heavy cream and whip on medium-high speed for 3-5 minutes until stiff peaks form.
  3. Gently fold the remaining strawberry puree into the whipped cream until combined.
  4. Layer reserved strawberry puree at the bottom of four glasses, then carefully pipe or spoon the mousse on top.
  5. Cover the glasses with plastic wrap and chill for at least 1 hour or overnight.
  6. Garnish with sliced strawberries before serving.
