- Wash 2 cups of fresh strawberries and slice them. Blend with 1/4 cup of granulated sugar until smooth. Reserve 1/2 cup of puree for later.
- Chill a mixing bowl for 10 minutes. Pour in 1 cup of heavy cream and whip on medium-high speed for 3-5 minutes until stiff peaks form.
- Gently fold the remaining strawberry puree into the whipped cream until combined.
- Layer reserved strawberry puree at the bottom of four glasses, then carefully pipe or spoon the mousse on top.
- Cover the glasses with plastic wrap and chill for at least 1 hour or overnight.
- Garnish with sliced strawberries before serving.
