  • 1/2 cup cocoa powder Dutch-processed preferred
  • 2 teaspoons baking powder
  • a pinch salt
  • 2 large eggs use vegan egg replacer for egg-free
  • 1/4 cup granulated sugar reduce for less sweetness
  • 1 cup whole milk almond milk can be used
  • 2 tablespoons canola oil or melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips highly recommended
Ganache Ingredients
  • 4 ounces bittersweet chocolate
  • 1/2 cup heavy cream can substitute with half-and-half

Method
 

Pancake Preparation
  1. In a large mixing bowl, sift together flour, cocoa powder, baking powder, and salt.
  2. In a separate bowl, whisk eggs and sugar until frothy, then add milk, oil, and vanilla. Mix until smooth.
  3. Combine wet and dry ingredients, folding gently. Mix in chocolate chips.
  4. For the ganache, heat chocolate and cream in intervals until smooth.
  5. Preheat skillet, pour batter, and cook until bubbles form. Flip and cook until golden brown.
  6. Serve pancakes topped with ganache and optional fruits or cream.
