  • 1/4 cup Coconut Oil Melted, can substitute with coconut butter
  • 1/4 cup Maple Syrup Can substitute with agave or date syrup
For the Coating
  • 1 cup Dark Chocolate Chips Dairy-free for vegan option

Equipment

  • food processor
  • mixing bowl
  • Parchment paper
  • spatula
  • microwave

Method

Step-by-Step Instructions
  1. Begin by blending your choice of fresh or defrosted blackberries in a food processor until you achieve a smooth puree, about 1-2 minutes.
  2. In a large mixing bowl, combine the smooth blackberry puree with coconut flakes, melted coconut oil, and maple syrup. Stir until fully combined, about 3-5 minutes.
  3. Line an 8x8 inch dish with parchment paper. Pour the blackberry coconut mixture into the dish, pressing it down firmly and evenly with a spatula, about 2-3 minutes.
  4. Cover the dish and place it in the refrigerator for at least 30 minutes to allow the bars to chill and firm up.
  5. Once firm, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals until fully melted and smooth.
  6. Carefully dip the chilled bars into the melted chocolate or drizzle it over the top to create a coating.
  7. Return the chocolate-coated bars to the refrigerator for about 15 minutes until the chocolate has fully hardened.
  8. Lift the bars out of the dish by the parchment paper and cut into squares or rectangles for serving.
