- Preheat your oven to 180°C (350°F).
- Peel, core, and chop the apples. Melt butter in a saucepan, add sugar and lemon rind, cook for 5-7 minutes, then transfer to a baking dish.
- In another saucepan, melt remaining butter, add flour/cornflour while whisking to form a roux. Gradually pour in milk, whisk until thickened for about 5-8 minutes.
- Remove from heat, let cool, then whisk in egg yolks and vanilla until well combined.
- Pour custard over apples in baking dish. Mix sugar and cinnamon, sprinkle over custard.
- Bake in preheated oven for about 20 minutes until golden brown.
