Preparation
- Marinate the chicken by combining chicken thighs with jerk seasoning and olive oil in a mixing bowl. Let sit for at least 15 minutes.
- Preheat your grill to medium heat (around 350°F). Slice pineapple into thick rings and grill for 3-4 minutes per side until tender.
- Grill marinated chicken thighs for 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest.
- In a mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, honey, and salt and pepper. Toss thoroughly and let sit.
- Assemble the sandwich with grilled chicken, grilled pineapple, and coleslaw on the bun.
- Garnish with fresh cilantro or parsley and serve.
