Ingredients
  

For the Chicken
  • 1 pound Boneless, Skinless Chicken Thighs Perfect for grilling
  • 2 tablespoons Jerk Seasoning Use homemade if possible
  • 1 tablespoon Olive Oil Can substitute with avocado or canola oil
For the Grilled Pineapple
  • 1 Ripe Pineapple Fresh is best, canned is also okay
For the Coleslaw
  • 4 cups Coleslaw Mix (Cabbage and Carrots) Store-bought or homemade
  • 1/2 cup Mayonnaise Greek yogurt can be used for a lighter version
  • 2 tablespoons Apple Cider Vinegar Can substitute with white vinegar or lemon juice
  • 1 tablespoon Honey Maple syrup works as a vegan alternative
  • to taste Salt and Pepper Essential seasonings
For Assembling
  • 4 Burger Buns Choose gluten-free for a gluten-free option
  • to taste Fresh Cilantro or Parsley For garnish

Method
 

Preparation
  1. Marinate the chicken by combining chicken thighs with jerk seasoning and olive oil in a mixing bowl. Let sit for at least 15 minutes.
  2. Preheat your grill to medium heat (around 350°F). Slice pineapple into thick rings and grill for 3-4 minutes per side until tender.
  3. Grill marinated chicken thighs for 6-7 minutes per side until cooked through (internal temperature of 165°F). Let rest.
  4. In a mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, honey, and salt and pepper. Toss thoroughly and let sit.
  5. Assemble the sandwich with grilled chicken, grilled pineapple, and coleslaw on the bun.
  6. Garnish with fresh cilantro or parsley and serve.
